A popular Bombay sandwich made in a different way!

BOMBAY PAV SANDWICH

Ingredients

4 pavs
3 medium potatoes, boiled, peeled and grated
1 tbsp oil
1 tsp cumin seeds
2-3 green chillies, chopped
8-10 curry leaves, chopped
1 medium onion, chopped
¼ tsp turmeric powder
2 tbsps chopped fresh coriander leaves
Salt to taste
Butter for applying + for brushing
Green chutney as required
Onion slices as required
Tomato slices as required
Cucumber slices as required
Sandwich masala for sprinkling
Boiled beetroot slices as required
Sev for garnish
Green chutney to serve
Tomato ketchup to serve
Tea to serve

Method

1. Heat oil in a non-stick wok, add cumin seeds and let them change colour. Add green chillies and curry leaves and sauté for a few seconds.
2. Add onion and sauté till translucent. Add turmeric powder and mix and cook for 1 minute.
3. Add potatoes and coriander leaves and mix well. Add salt, mix and cook for 1-2 minutes.
4. Halve the pavs and apply butter on both halves. Apply green chutney on each halve, apply a portion of the potato mixture on the base halve of the pavs. Place a few onion rings, tomato slices, cucumber slices and sprinkle sandwich masala. Place a few beetroot slices, sprinkle salt and cover with the remaining halves of pavs.
5. Heat an electric griller, brush butter, place the pav sandwiches, brush butter on top of them and grill for 2-3 minutes or till grill marks appear.
6. Diagonally halve the sandwiches and arrange on a serving plate and serve hot with green chutney, tomato ketchup and tea.
