Here’s a simple spring mix salad recipe I enjoy all year round. This recipe is really easy to make and is also delicious and healthy. INGREDIENTS:
– 2 or more handfuls of organic spring mix or any greens of choice
– 1 diced tomato (about 1 cup)
– 3 diced strawberries (about 1/2 cup)
– 1/2 diced green apple (about 1/2 cup)
– 1 or 2 hard-boiled eggs
– 1 tbsp chia seeds or any other seeds
– 2 tbsp chopped nuts of choice
– 1 tbsp champagne vinegar (or red wine vinegar)
– 1 tbsp olive oil
– Salt & pepper for taste
INSTRUCTIONS:
– Add all the ingredients to a salad bowl.
– Toss together and serve. Enjoy!
