VEGGIE TOFURKY & CHEESE SANDWICH (VEGAN)
Ingredients.
· 3 Slices of vegan bread
· Vegan Mayonnaise
· Canned red bell pepper ( Sliced )
· 1 Slice of vegan cheese
· Mini Cucumber (Sliced)
· 4-5 Slices of Tofurky
· Arugula
1. Spread mayonnaise onto a piece of bread, top with red bell pepper ( be sure to drain all the water from the canned red bell pepper), vegan cheese, add a second slice of bread, spread mayonnaise, top with cucumber, tofurky, handful of arugula and finally top with another slice of bread. The Sandwich is ready to eat!
CHICKPEA SALAD SANDWICH (VEGAN)
Ingredients.
· 2 Slices of vegan bread
· Slices of tomato
· Chopped purple cabbage
· Sprouts
For the chickpea salad.
· ½ Cup of Vegan Mayonnaise
· 1 Cup of canned chickpeas
· 1/3 Cup chopped green olives
· 1/3 Cup chopped red onion
1. In a medium size bowl smash the chickpeas, add the olives, onions, mix well, and add the mayonnaise and stir, season with salt if needed.
2. Top a slice of bread with a handful of sprouts, with a spoon add to or three serving of the chickpea salad (you can store the leftover in the freezer and use it to make more sandwiches or as a topping in green salads), top with slices of tomato, purple cabbage and finally top with another slice of bread. The Sandwich is ready to eat!
CHOCOLATE, ALMOND BUTTER & JELLY SANDWICH
Ingredients.
· 2 Slices of vegan bread
· Vegan chocolate spread
· Almond butter
· Blackberry Jam
· Slices of strawberry
· Slices of banana
1. Spread almond butter and the jelly onto a slice of bread, add slices of strawberry, slices of banana, with a spoon pour the chocolate spread and finally top with slice of bread. The Sandwich is ready to eat!
