Chickpeas salad is a healthy and high protein salad that can be easily made at home. It’s a very flexible recipe, so you can add veggies of your choice and also adjust different flavors according to your own taste. It’s the perfect salad for lunch, the sweet and tangy taste together with crispiness of chips and cheesy taste of mozzarella cheese just adds to the flavor. This recipe is healthy and so easy to make, so don’t forget to add this nutritious salad to your menu.

Ingredients:
1 cup Chickpeas (dry)
½ cup Potatoes (boiled and cubed)
½ cup Tomatoes (cubed)
½ cup Cucumber (peeled and cubed)
¼ cup Onions (finely chopped)
¼ cup Green Coriander (chopped)
½ cup Mozzarella Cheese Cubes
1 tbsp Honey
2 tbsp Lemon Juice
1 tsp Olive Oil
Black Salt (according to taste)
½ tsp Black Pepper Powder
1 cup Potato Chips (crushed)
Instructions:
1. Lets start the recipe. First wash and soak chickpeas in 4-5 cups of water for 7-8 hours to make them soft, this will help in boiling them easily.
2. Now boil them using any of the three ways. First you can cook them in pressure cooker with 4 cups of water and 1 tbsp salt for 20-25 mins. The second way is to boil them in a pot with 5-6 cups of water and 1 tbsp salt for approx. 60 mins till they become soft. And the third way is to just use readymade canned chickpeas.
3. Once chickpeas are boiled strain all water. Now lets prepare other ingredients. First take some chips and crush them a little but just be careful not to over crush them. At the same time I have also cut boiled potatoes, tomato and cucumber in small cubes. At last, I have finely chopped onions so that they don’t feel too strong while eating.
4. Now take a big bowl and add boiled chickpeas. After that add all ingredients one by one: potatoes, tomato, cucumber, onion, chopped green coriander, mozzarella cheese cubes and black pepper according to the spiciness you want. Now add some honey and lemon juice to give slight sweet and sour taste to salad. At last add some black salt but be careful as we also added salt which boiling chickpeas. Now mix all ingredients gently so that all flavors blends well together.
5. If you don’t like the veggies which I have used you can change them according to your choice. Also feel free to adjust various spices according to your own taste.
6. Once all ingredients are mixed transfer them to a serving bowl. And now add chips on top of salad so that they will remain crispy and will enhance salad taste.
7. Now our super delicious chickpeas salad is ready to enjoy.
Tips n Tricks:
1. You can change veggies of your own choice and liking in the salad.
2. If you dont have mozarrella cheese, you can use any other cheese.
3. If you dont have cheese you can also use paneer or tofu instead of cheese.
4. To make it vegan, use sugar instead of honey and tofu instead of cheese.
