We spent this evening making a healthy dinner, which is one of our favorite pass time at home. We made some eggplant bruschetta here is the recipe

Ingredients.

1. whole eggplant
2.tomatoes
3.onions
4.garlic
5.Basil
6.Olive Oil
7.Balsamic vinegar
8.Eggs
9. breadcrumbs
Chop up basil, garlic, and onions then place in a small bowl, add a pinch of olive oil and balsamic vinegar and mix.
Break two eggs in a small bowl, beat the eggs. Cut a few slices from the eggplants, deep eggplants into eggs and deep them into bread crumbs. Place the eggplants on a baking pan and bake on 350 degrees for 20 minutes. After 20 minutes place the baked eggplant slices on plates. Garnish the eggplants with the basil, tomato mix. Yum! enjoy.

Main Dish

Ingredients

Sirloin Steak
Salt and pepper
Honey
Olive Oil
Balsamic Vinegar
Asparagus
Potatoes
Cilantro
Garlic

Chop some garlic, and Cilantro set aside.

Cut potatoes in cubes, put water in a pot with add a teaspoon of olive oil set to boil then add potato cubes and boil for 10 minutes. Drain the water then mash the potatoes, add garlic and cilantro.

Season the steak with salt and pepper, in a pan, add a tablespoon of olive oil, sear the steak 5 minutes on each side then place on a baking pan with seasoned asparagus then bake for 20 minutes. While the steak is baking add olive oil, honey to the pan, stir, add balsamic vinegar stir until the mix is the right consistency for the glaze. Separately sautee tomatoes. Once everything is done. Place the mashed potatoes on a plate, followed with the steak and asparagus, then put the glaze over the steak and garnish with the sauteed tomatoes. Enjoy!
