Today I’m making a simple Lemon & Herb Couscous Salad with an Oil-Free Dressing! I stumbled upon this recipe after buying too much dill and needing to use it up. This recipe would be great for potlucks, picnics or backyard BBQs. Give it a try! Hope you enjoy. 🌱

🍋 Lemon & Herb Couscous Salad (my modified version)
1.5 cups whole wheat couscous
2 cups boiling water
0.5 cups red onion (finely chopped)
1 cup cucumber (chopped)
1 cup cherry tomatoes (chopped)
1/2 cup fresh herbs (I used parsley, basil and dill)
Optional add ins: olives, more veggies or toasted pine nuts!

🌱 Oil-Free Dressing (I highly recommend doubling or tripling this recipe!)
0.25 cup aquafaba
1 teaspoon mustard
0.5 teaspoon maple syrup
1 teaspoon lemon zest
3 tablespoons lemon juice
Pinch of salt & pepper
