Ingredients:
– 2 heaping cups of cashews
– 2 cups of old-fashioned oats
– 2/3 cup dairy free chocolate chips (I use enjoy life brand)
– 1/2 cup maple syrup
– 1 tbsp vanilla extract
– 4 tbsp water

Directions:
– Process cashews into a flour
– Process oats into a flour
– Mix cashew flour and oat flour briefly in the food processor to blend together
– Add remaining ingredients to the flours in the food processor and mix well until a sticky dough forms
– Form dough into cookie shapes on a baking sheet lined with parchment paper
– Place the cookies in the freezer for at least 1 hour or until firm
– Enjoy!

SPECIAL NOTE:
– Please note, cookies should be stored in the freezer or refrigerator
– Will last about 5-7 days, but they’re so delicious, you won’t have them for that long!
