Healthy Spinach Artichoke Dip Recipe:

2 Fresh artichokes
½ lemon
Salt, to taste
Pepper, to taste
1 Onion, chopped
2 tablespoons, Garlic
5 ounces spinach.
2 cups Full-fat greek yogurt
2 tablespoons parsley
2 tablespoons chives
¼ cup lemon juice
2 tablespoons olive oil
Sliced Watermelon radishes to garnish (optional)
Grilled sourdough bread to dip.

PREPARATION
Peel the artichokes. Peel off any dark hard outer leaves. Cut off the top third. Cut the artichoke in half lengthwise, scoop out all the feathery flesh inside. Cut into quarters and set aside. If it takes a while, rub the artichokes with lemon or soak in acidulated water until ready so they do not turn brown.
Add the trimmed artichoke hearts to boiling water with a lemon half and salt. Boil for 20 minutes or until tender.
To a skillet on medium-high heat, add olive oil and heat until it shimmers. Add onion, garlic, salt and pepper. Cook until the onions are soft and browned.
Add the cooked artichoke pieces and spinach. Mix until the spinach wilts down. Let the mixture cool.
To a bowl add the greek yogurt, cooled veggies, parsley, chives, lemon juice and adjust seasoning of salt, pepper, if needed.
Garnish with olive oil, one of the artichoke quarters, and julienned watermelon radish
Serve with grilled sourdough bread, extra veggies, and watermelon radish to dip.
