In the spirit of V(G)alentine’s Day, I put a creative twist for a quick bed and breakfast idea by making Mini Heart Shaped Pancakes! 💕 This is such a thoughtful gesture or gift to give to someone you care about. Food always leads to the heart 😊 These are healthy, naturally gluten free and Paleo friendly. You can always use this heart shape cut out for other recipes like cookies and brownies. I made three different versions of pancakes for those who love fruit, chocolate or both!

Ingredients:
– 1 Box of Simple Mills Pancake & Waffle Mix
– 5 eggs
– 1/3 Cup Almond Milk OR Water
– 3 tbsp Coconut Oil
– Banana
– Strawberries
– Semi-Sweet or Dark Chocolate Chips (I used Lily’s)
– Maple Syrup
– Butter or Coconut Oil
– Ground Cinnamon (Garnish)
– Cocoa Powder (Garnish)
– Heart Shape Cutter (To make heart shaped pancakes)

Instructions:
1. Follow instructions on the box.
2. Mix all the ingredients together.
3. Heat the pan on medium low.
4. Add 1/3 cup of pancake batter on to pan.
5. Flip over until all the sides bubble and start crusting on the edges and let the other side brown nicely.
6. Use the heart shape cutter and make a cut out of a heart pancake. You can try to get 2-3 hearts depending on the size of the heart shape cutter.
7. Stack the pancakes on each other and top off each stack with strawberries, banana and ground cinnamon, and chocolate chips and cocoa powder.
8. Finish all of them off with a drizzle of maple syrup. You can also had a slice of butter and let it melt on the top while the pancakes are warm.
9. Enjoy!
