Recipe:
5 slices bread (I use low cal Healthy Life bread at 35 cal per slice)
1 lb pork sausage (I use Jimmy Dean reduced fat..it’s actually a 12 oz pack)
6 eggs, beaten
1 cup milk (I use skim)
1/2 t dry mustard
1/2 t salt
1/4 t pepper
1 c shredded cheese (I use Kroger reduced fat Mexican mix but sharp cheddar is really yummy)
Arrange bread cubes in lightly greased dish..not quite a 9×13. Brown sausage in skillet and drain. Crumble over bread pieces. If planning to freeze and eat later, let sausage cool completely before assembly. Beat eggs, milk, mustard, salt and pepper in a bowl. Pour over sausage and bread evenly. Sprinkle cheese over top. If planning to eat the next day, place in refrigerator, covered, overnight. If planning to freeze, cover and place in freezer. When ready to eat, heat oven to 350 and cook for 35-50 min or until eggs are set and the top is browned.
When made as directed and cut into 4 servings, each serving is 430 cals and 40 G protein.
