Recipe (yields 2 large loaves or 3 regular loaves):

500g or 5 cups spelt flour
250g or 1 3/4 cups whole wheat flour
250g or 1 3/4 cups all purpose flour
(You can make this recipe with 1kg or 10 cups of spelt flour instead)

1 tbsp instant yeast
2 tsp Himalayan pink salt

2 tbsp chia seeds
2 tbsp black sesame seeds
2 tbsp ground flax seed
2 tbsp poppy seeds
3 tbsp sunflower seeds
3 tbsp pumpkin seeds
1/2 cup chopped/broken walnuts
(You can use any seeds or nuts you like and in any amount, or omit them altogether)

600ml or 2 1/2 cups water
2 tbsp honey or any healthy sweetener
2 tbsp grapeseed or olive oil

First rise: 1 to 1 1/2 hours
Second rise: 1/2 to 1 hour

Bake at 200C or 400F until golden brown
