Today I set out on an adventure to make a fool of myself by trying Irish soda bread for the first time…and in the Instant Pot no less! While I did make a fool of myself, the soda bread actually turned out great! I don’t cook or eat bread very often so this was a special treat for St. Paddy’s Day. See below for the recipe!

Ingredients:
2 cups soy milk
10 dates
2 tablespoons apple cider vinegar
4 cups whole wheat pastry flour
1 teaspoon baking soda
1 tablespoon caraway seeds
1 cup raisins

Method:
Blend the soy milk and dates until smooth. Add the apple cider vine- gar and blend for just a few seconds. Set aside for 10 minutes to allow the apple cider vinegar “curdle” the milk.
Combine the flour, baking soda, and caraway seeds in a mixing bowl and whisk together. Add the raisins and give it another stir.

Pour the wet blender ingredients into the dry and mix until you have a sticky dough.
Knead the dough in your bowl adding additional flour as needed to reach desired doughy texture. Once it is well-combined, form it into a nice ball and plop it into an 8 cup round glass pyrex, no liner needed.

Place your steamer basket or trivet into you 6 or 8 quart pressure cooker with one cup of water beneath. Place the pyrex on the trivet and cover with a round piece of loose fitting parchment or tin foil.

Set the pressure cooker to manual for 45 minutes, natural release. Remove and allow to cool thoroughly before slicing it up.
