Big, hearty salads are something most everybody enjoy’s! Especially when it is covered in ranch and bacon! As I don’t eat meat, I decided to make some mushroom “bacon” to top mine. A trick I use is to cook the mushrooms in liquid smoke. Liquid smoke is full of right off the grill, charred, meaty flavor! A vegans secret weapon

INGREDIENTS:
Can of “Fiesta” style corn
Mushrooms
Liquid smoke
EVOO
Lettuce
Avocado
Carrots
Celery
Cucumber
Everything seasoning
Ranch (I use vegan)

DIRECTIONS:
Heat oil in pan. Add corn, mushrooms and a few dashes of liquid smoke. Let simmer for 5 minutes. Add salt & pepper.Turn off heat and begin assembling salad as preferred!
