If you are looking for a way to get more vegetables into your life- I have got the recipe for you!
Today we are making a bang bang veggie bowl… with a little twist inspired by candace the edgy veg
Side note- you should check out her channel. She makes amazing vegan food that’ll knock your socks off!!
Anywho-
All you need is about 3 cups of your favorite- or less than favorite vegetable fare.
I went with brocolli, red onion, green beans, and baby portobellos. But the vegetable sky is there limit!
You also need 1 package of tempura batter mix
About 1 and 1/4 cup warm water
1/2 teaspoon of salt, pepper, cayenne, and granulated garlic (garlic powder will do as well)
Large frying pan
About 3 cup canola oil to fry in
Mix up tempura batter mix, water and seasoning until is about the consistency of pancake batter
Dunk in veg
Fry in batches one vegetable type at a time to ensure even cooking.
Once browned on all sides place on a paper towel lines baking sheet.
Sprinkle warm veggies with salt
To make sauce
Mix together 3 tablespoons of creamy peanut butter with 2 tablespoons Thai chili sauce I’ll link below a way to buy it if you can’t find any at your local supermarket. Start with that- then taste test and add more until you get the spicy ness you are going for. If you like it more mild and the sauce is still very thick- add a few tablespoons of water until it is a dipping consistency.
Enjoy on there own, on rice, or a bed of greens.
