Chicken Stuffed Peppers
3 large bell peppers
1 pound diced chicken
1 ½ cups chopped spinach
1 cup shredded cheese
Onion powder
Garlic powder
Note: I added in some cilantro and jalapeno peppers leftover from previous recipe.

Prep peppers by slicing them in half, remove core and seeds.
Dice the chicken in chunks.
In a bowl, mix together the chicken, spinach, spices and cheese.
Stuff the peppers with the chicken mixture.
Bake @ 350 degrees for 45 minutes to an hour until peppers are soft and chicken is cooked through.
