IRISH SODA BREAD – DIABETIC FRIENDLY, LOW NET CARB & NO ADDED SUGAR!

Ingredients

1 Egg
1 ¾ Cups Almond Milk
â…“ Cup Sour Cream
1 T Lemon Juice

3 Cups Carbalose Flour
1 Cup Cake Flour
1 teaspoon Salt
1 teaspoon Baking Soda
4 Tablespoons granular Stevia

5 Tablespoons unsalted butter, diced and chilled or frozen

½ Cup loosely packed raisins

Instructions:

Mix together all wet into a bowl and set aside.

In a separate bowl, mix together the dry ingredients
Then cut in the butter with your hands or a pastry cutter.

Once the butter has been mixed into the dry ingredients and it resembles corn meal, then combine the wet ingredients mixture into the dry, and gently fold until no dry ingredients are visible.

Then fold in your optional raisins.

Roll the dough out onto a work surface, and knead the dough for 15-30 seconds. Knead the dough into a disc about 8 inched wide. Then place into a cast iron skillet or sheet pan.

Bake at 400 degrees for 35 – 45 minutes, or until golden brown.

Remove oven and cool in the skillet or pan for 10 minutes. Then remove bread to a cooling rack to cool for another 10 minutes minimum.
