I’m trying share since simple and healthy recipes with friends during this covid19 coronavirus uncertain times. Some products have been substituted due to shortages.

Recipe

1 tbsp olive oil
1 brown onion chopped
1 or 2 cloves of garlic crushed
1 teaspoon grated ginger
1 tablespoon curry powder heaped
2 teaspoons curry paste
half teaspoon ground cumin
2 tablespoons tomato paste
2 x 425 cans tomatoes chopped
2 x 270 mill can coconut cream
125 g button mushrooms
1 head broccoli cut into florets
125 g of beans sliced
125g pumpkin chopped
quarter cauliflower cut into florets
1 potato peeled and chopped
salt and pepper to taste
