School has been cancelled due to recent events and so I’m sharing with you what we do on a typical homeschooling/ quarantine day! 🥖MY MOM’S BREAD RECIPE:

🇮🇪IRISH CREAM COFFEE CREAMER RECIPE
1 can sweetened condensed milk
2 tbs Chocolate Syrup
1 tbs Vanilla Extract
1/2 tbs Almond Extract

Add ingredients to a pot on low-med heat and stir until well combined. Mixture will thin as it warms. Pour into re-usable glass container. Store up to 5 days in refrigerator.

Use 2-3 tbs in a cup of coffee. I made mine with shots from my espresso machine but brewed coffee would work too.

☘️SHAMROCK SHAKE SMOOTHIE
In my Ninja Bullet I add:
Large handful of fresh Kale
1 1/2 Frozen Bananas
Bunch of fresh peppermint leaves (1 tsp peppermint extract would work too!)
1 tbs semi sweet mini chocolate chips
1 cup milk (I used coconut milk)

Blend until smooth and enjoy!

🍖CORNED BEEF BRISKET:
How I *Typically* make my corned beef brisket (leaving THIS recipe because I don’t have a good instant pot recipe that I like yet…)
1 Corned Beef Flat Cut brisket
1 can dark beer
1 cup water
3 carrots, chopped
2 stalks of celery, chopped
1 shallot
In a dutch oven saute sliced shallot, celery and carrot for a bit and then add water, can of beer and brisket. Cook at 300f until internal temp reached 145f.

🥔ROASTED RED POTATOES:
3 lbs red potatoes cut into thirds (or half if small potatoes)
Drizzle with olive oil (and I added truffle flavored olive oil, which was yummy!)
Salt and pepper to taste
1 tbs Garlic powder
Mix until potatoes are coated.
Cook at 400 until tender

🥬BUTTERY CABBAGE:
1/2 head of green cabbage, chopped
1/2 yellow onion, sliced
1/3 stick of butter (I used Irish butter!)
2 tbs johnny’s garlic bread seasoning

Combine all ingredients and bake at 400 until al dente!
