Dark Chocolate Dipped Peanut Butter Stuffed Dates (EASY HEALTHY SNACK) // Looking for gut friendly snacks that are easy to make, healthy and delicious? And want to know how to make stuffed dates? Look no further! These Dark Chocolate Dipped Peanut Butter Stuffed Dates are one of my personal favorites. And I LOVE making healthy vegan snacks.

So if you’ve been looking for easy healthy snack ideas and especially easy snacks to make at home, then this is the perfect video for you.

Full recipe:

12 medjool dates
12 tsp natural peanut butter
80g dark chocolate of your choice (I used Vivani 92%)
2-3 tbsp shredded coconut (optional)

1. Choose a sauce pan where you can fit a plate on top for the chocolate. Fill the sauce pan half way with water and set to boil.
2. In the meantime, slice the dates on one side and remove the pits
3. Take your chocolate and break into smaller pieces and place on your plate. Then place the plate over the boiling water and lower the temperature to a soft boil. Stir occasionally.
4. In the meantime, fill the dates with peanut butter (no perfection needed here!)
5. Once the chocolate is melted – drizzle, dip, or coat the dates with the chocolate until covered
6. Sprinkle with shredded coconut (optional)
7. Place in freezer for 30 min – 1 hour
8. Enjoy!

If any leftovers you can keep them in the fridge for a few days (if they last that long!)
