CIABATTA bread, here’s an easy & basic bread, only needs a few ingredients plus 17 hours of your time 😁

CIABATTA
all purpose flour 440g/ 4 cups
Salt 9g/ 1.5 tsp
Instant yeast 1g / 0.3 tsp
Water (55-65 F) 350g / 1.4 cups
Mix all ingredients one minute by hand or spatula, place into covered container overnight on kitchen counter 14-16 hours. Will double in size. After first rise, place on well floured surface. Four folds: folding dough in half, then again cross in half. Repeat, place seam side down. Be gentle, don’t degas dough. Here is a makeshift proofer, placing steaming pot of water in empty oven along with dough. Or leave outside ~1 hour.
Shape into 2 long loaves, dust with flour, & quickly stretch it out. Olive oil drizzle with sea salt. Bakeoff at 475F, ~25 minutes till golden. Cool on rack. Enjoy! Inspired by Jim Lahey!
