BREAKFAST (1 serving)
blend in a high speed blender:
– 1 banana (£0.18)
– 1 orange (£0.16)
– 1 cup frozen berries (£0.22)
– 1/4 cup oats (£0.02)
– 1 tbsp peanut butter (£0.20)
– 1/3 cup water
t o t a l : £0.78
LUNCH (1 serving)
bake in oven on 150 degrees celcius until potatoes are golden brown
– 1 potato (£0.28)
– 1/2 head broccoli (£0.15)
for the mushrooms:
add 1 tsp of coconut oil to a pan, then add 1/4 onion chopped (£0.04) and garlic, wait for the onions to become translucent. Then add sliced mushrooms (£0.20). Once mushrooms are cooked through, add 1 tbsp soy sauce and 1 tbsp tomato purree.
Assemble everything in a bowl along with 1/2 can of baked beans (£0.11) and drizzle 1 tbsp tahini (£0.13) on top.

DINNER (makes 3 servings)
1. slice 1/2 onion (£0.08), 3 cloves of garlic and 7 med/big sized mushrooms (£0.14)
2. add 1 tsp coconut oil to a sauce pan, once warm add the onion/garlic, wait until the onions become translucent and then add the mushies
3. cut up 3 bug leaves of spring greens (£0.04) and add to the pot once mushrooms are cooked through
4. once spring greens look a bit more tender and bright green, add 1 potato cubed (£0.09), 1 can of mixed beans (£0.15) with 3 cups of water, 1 veggie stock cube (£0.05) and 1 tbsp miso paste (£0.26).
5. cook until potatoes are soft. Tadaaa, done.
