This is my go-to salad that I eat basically every day. It’s sort of like a kitchen-sink salad where I normally have all these ingredients on-hand and then can clean out my fridge by the end of the week with some variation of this salad. The recipe changes from time to time but here is a basic variation of what is usually in my everyday salad:
Lettuce
Bell peppers
Cucumbers
Hearts of palm
Onion
Feta cheese
Pumpkin seeds
Protein (chicken, salmon, tuna)
Dressing: 1 tbsp dijon mustard, 2 tbsp balsamic vinegar, 3 tbsp olive oil, salt
