What’s for Dinner. Here is our Family of Six’s Easy Meals and Dinner Ideas.

In this video I prepare a Pasta Dish – two ways (to include Gluten Free), I also share my favourite Vegetarian/Vegan pie. I received this recipe over thirty years ago and it’s very special to me.

This is probably the recipe that made me think that vegetarian and healthy food could be great!! I was twenty at the time and inspired by a women who was fighting cancer naturally and eventually beat it… I had a horrible diet at the time of coffee, noodles and muesli bars..eeeekkk…

I also share here how I feed my whole family. There are three different meals created here to suit different needs.

** RECIPES **

Hunza Pie
Make Pie Crust (see recipe below)
1 cup of cheese
Mixed Herbs
2 Cups of Rice
1 Sliced Tomato
I cup of Silverbeet or Spinach or Kale
1 Cup of Pumpkin or Squash

1. Prepare and cook Pie Crust
2. Steam pumpkin and kale separately
3. Cook 1 cup of brown rice
4. Mash pumpkin
5. Line Pie crust with cheese and herbs
6. Spoon rice to cover the whole bottom of pie
7. Line again with cheese
8. Place layer of kale over pie
9. Place layer of pumpkin over kale
10. Spoon over more rice to cover pie
11. Sprinkle with left over cheese and herbs
12. Decorate with sliced tomato
13. Place pie back in over to warm through and for cheese to melt…

Whole Meal Pie Crust

2 cups of wholemeal flour ( I use gluten free or almond flour)
1 tsp salt
1/3-1/2 cup of butter or Oil
9 Tbsps of Iced Water

1. Mix ingredients and form dough
2. Roll out and place in greased pie tin or dish
3. If mixture breaks as per most gluten free.. press base into pie tin
4. Prick holes in pie crust with fork and refrigerate for 1/2 hour
5. Cook until Golden Brown at 200 (about 10 minutes)
