*Recipe down below. WOW, these are way too good! I’m excited to share with you my cookie dough energy balls. These make a great snack and will last a while in the fridge… if you don’t eat them all first.

Cookie Dough Energy Balls

Ingredients:
1 cup rolled (or quick) oats
4 large medjool dates (or just under 1/2 cup of dates)
3/4 cup non-dairy milk
1/2 cup peanut butter
1/3 cup protein powder (VivoLife Salted Maca Caramel is ideal)
1/4 cup ground flax
1/4 cup chocolate chips
1 tsp cinnamon
Pinch of salt
*Flaked coconut to roll them in

Method:
Blend oats in a blender or food processor to make oat flour.
Chop dates
In a large mixing bowl add all the ingredients and mix with hands until uniform consistency
Roll into balls
Roll in flaked coconut (optional)
Place in fridge for 20-30 minutes then enjoy!
*Can be made in a food processor or high powered blender
