Mash the bananas and add the flour, eggs, sugar, and butter. So soft and fluffy, the recipe:INGREDIENTS
 700g (24.5 oz) flour;
 1 tsp salt;
 15 g (0.5 oz) dry yeast;
 1 tbsp sugar;
 2/3 cup warm milk;
 2 bananas;
 2 eggs;
 2 egg yolks;
 50g (1.7 oz) sugar;
 80g (2.8 oz) butter, room temperature.

METHOD
 Whisk warm milk with sugar and yeast. Set aside until the mixture becomes airy and bubbly.
 Meanwhile, whisk the flour with salt. Mash bananas with a fork to make a puree.
 Add yeast mixture, banana puree, eggs, yolks and sugar into the flour.
 Use dough hooks to stir everything together and make a smooth and elastic dough. Add room temperature butter and incorporate it into the dough.
 Form the dough into a ball, cover and set aside for an hour.
 After an hour roll out the dough into a rectangle, roll 2/3 way and cut unrolled part into strips. Place strips on top of the loaf, transfer into a buttered baking pan and brush with egg wash. Set aside for 30 minutes.
 Bake at 180C/350F for 45-55 minutes.
