How to make Honey Mustard Chicken Salad at home

Ingredients:
Honey 50ml
Mustard 10gms
Olive Oil 50ml
Lemon Juice 20ml
Chicken Thighs 250gms
Salad Greens 200gms
Cherry Tomatoes 7-8pcs
Cucumber 50gms
Pomegranate 30gms
Garlic(chopped) 10gms
Salt To taste
Peri Peri Sauce 1tbsp
Boiled Corn 50gms

To Prepare:

– For the Vinaigrette, in a small bowl, whisk together Olive Oil, Mustard Sauce, Lemon Juice, Garlic.
– In a pan, add a tbsp of oil, then place the chicken thighs skin side down, season and cook for 2 minutes each side. Once the chicken turns golden brown, add a tsp of the marinade on each side and cook further for 3-4 mins till the chicken is charred & crispy.
– Meanwhile, in a large bowl, mix together the lettuce, cherry tomatoes, boiled corn, cucumber, Pour over the vinaigrette and toss the salad.
– Place the cooked chicken thighs on top, garnish with leftover vinaigrette and chopped parsley.
