Rarely do we make just the ‘right amount’ of oatmeal…either we make to little…or we have half a pot left! Sometimes our animals get the leftovers for breakfast…in todays case we make it into a healthy whole grain muffin that tastes delicious but also makes you feel like you did something good for your body!

Leftover Oatmeal Muffins

3C whole wheat flour
8 tsp baking powder
4 tbs ground flax seed
1 tsp sea salt
1 tsp ground cinnamon
1 c add ins (nuts, fruit, etc.)
2 cup leftover oatmeal
6 T pumpkin or squash
1 C unsweetened almond milk
2 eggs
1/2 c honey

Bake at 400 degrees in a mini muffin pan for 15 minutes
