Today we are cooking from my pantry again!
Making a healthy and easy to make banana bread. It’s incredibly fluffy, has minimal and interchangeable ingredients, no oil or added sugar, and vegan!
All you need-
4 very ripe bananas
1 ‘neat egg’ or egg substitute (substitutes listed below)
1/4 cup peanut butter
1 teaspoon vanilla extract
2 cups oat flour
2 teaspoons baking powder
1 teaspoon baking soda
1/8 teaspoon salt
2 teaspoons apple cider vinegar
2 teaspoons water
1/4 cup dark chocolate chips (optional)

Mash 3 of the bananas- reserving the 4th for decoration
Add your peanut butter, egg substitute, and vanilla. Fold together with a spatula
Fold in dry ingredients
Pour in water and vinegar
Mix in chocolate chips, if your using them:)
add 4th banana to the top of the loaf, cutting and placing however you desire. This will add more sweetness and texture… and looks totally Instagram worthy 🙂
Place in a greased loaf pan and bake immediately!
You want the batter to still be foaming from the vinegar and soda reaction. This fluffs up the bread even more. And gives you a great rise on your bread.
Bake for 50-60 minutes at 350 degrees Fahrenheit
Checking around 50 minutes for done-ness with a toothpick or knife.
Serve warm or cold! I love it with a huge dollop of vegan butter 😍

Other egg substitutes

flax egg- 1 tablespoon ground flax plus 3 tablespoons water. mix and let sit for 5 minutes
Chia seed egg- 1 tablespoon chia seeds plus 4 tablespoons water. mix and let sit for 5 minutes
