The Stuff:
1 – large sweet potato
1 – medium jalapeño pepper
1 – avocado
2 – gloves garlic
1/2 canned black or pinto beans
1/2 cup quinoa (cook using 1:2 quinoa:water ratio)
1/2 onion (any color onion)
1 – half of a bell pepper (mix different colors for fun)
1 tsp each (salt, pepper, & garlic powder)
1 – lime
Cilantro
Prepping:
-1/2 cup quinoa cooked in 1 cup water for ~5 minutes (don’t forget to wash your quinoa)
once cooked to you liking, set quinoa aside.
-Now, chop everything to your liking (we cubed ours).
(Sweet potato, peppers, & onion)
-Get some boiling water going. Then steam/cook sweet potatoes for 5-7 minutes (don’t make them too soft).
-Ok, everything’s ready. Let’s make that tasty meal happen.
-heat up a pan on medium low heat
-add 1-2 tsp vegetable oil
-add minced garlic (cook for 1-min)
-add chopped onions & peppers (cook until translucent)
-add lightly cooked sweet potatoes + beans
-add seasoning (salt, pepper, & garlic powder)
-lower heat , cover, and let simmer for 5 minutes
-Voila!! Time to plate and enjoy this healthy vegan goodness
Plating: start w/ the quinoa as your base, add “veggie” mix, cut up avocado.
Optional: garnish w/ lime juice and cilantro or any other homemade sauces you desire. We’ve made our own homemade sauce that we are wiling to made a video sharing it. Let us know in the comments if you’d like to see a video w/ the recipe.
