Here’s what we ate today as a vegan couple. I also share a really simple and delicious Creamy Herb Salad Dressing Recipe. We go into a little bit of Kris’ journey to eating a vegan diet and have a simple yet delicious food combos that work for both of us. There are many ways to eat a vegan diet, here’s how we did it today. Hope you all are doing well, be safe and healthy xx.

CREAMY HERB SALAD DRESSING:
1 cup cashews (soaked and drained)
2 tbl fresh dill
2 tbl fresh parsley
2 tbl fresh thyme
3 garlic cloves
1/2 to a full lemon juiced
salt and pepper to taste
water as needed

Add all ingredients to a vitamix and blend until smooth and creamy. Feel free to add more herbs, lemon juice or spices to taste. I use about a tablespoon at a time, and it lasts in the fridge in a glass jar with lid for 4 to 5 days.
