Purslane Salad😍
Ingredients:
▪︎A large bunch of purslane
▪︎ 2 cucumbers
▪︎ 2 tbsps fresh corn kernels
▪︎ 1/2 glass of Soy yogurt
▪︎ pinch of salt
▪︎ 2 tbsps virgin olive oil.

Wash and put purslane leaves into the bowl. Grate cucumbers. Add Soy yogurt, grated cucumbers and olive oil into bowl and mix. Put the salad serving plate with fresh corns kernels on top.

Red cabbage salad with walnuts
Ingredients:
▪︎ 1/4 red cabbage
▪︎ 2 tbsps crushed walnuts
▪︎ 2 tbsps virgin olive oil
▪︎ 2 tbsps apple cider vinegar
▪︎ 1/2 glass Soy yogurt
▪︎ 1 tbsp Vegan Mayo
▪︎ pinch of salt.

Cut one medium-sized red cabbage into 4 pieces. I used one piece. Cut out the small core of the end. Using sharp knife cut the cabbage into thin strands. Wash and put into a mixing bowl. Add pinch of salt and apple cider vinegar. Knead the cabbage about 5 minutes. Then pour olive oil and mix well. Its important so that the structure of the cabbage is broken and this makes it soft. At the end mix all the ingredients, then stretch it and put into the fridge.
