ONE SERVING =
Rotisserie Chicken Breast – 5 oz
Medium Red Onion – 1/4
Jalapeno – 1 oz
Mission Corn Tortillas – 4
Filippo Berio Extra Virgin Olive oil – 2 tsp
Texas Mild Salsa – 1 tbsp
Fage 2%Greek Yogurt – 1 oz
Red Cabbage – 1.5 cups
Cilantro – 1 cup
Sharp Shredded Cheese – 1/4 cup

RECIPE
Chop up chicken, red onion, jalapeño, cilantro, limes and red cabbage

1. Saute red onion then add jalapeño (garlic if desired)
2. Once onion is cooked add chicken and stir until all combined
3. Squeeze lime and add salt as desired
4. Cover chicken and leave on low heat to keep warm
5. Pour 1 tsp on olive oil in pan and add tortillas once oil is warm
6. Flip tortilla over and add cheese

Once tortillas and chicken are done, it’s time to make the tacos!

Add yogurt (as sour cream) and salsa
Then add chicken
Garnish with cilantro, add more lime and finish by adding red cabbage for crunch! Enjoy 🙂
