Roasted Vegetable & Chickpea Salad w/ Garlic Dill Dressing
Ingredients:
Vegetables–
1 medium head of broccoli, chopped into bite-size pieces
1 large sweet potato, large dice
1 medium red bell pepper, thinly sliced
1/4 cup olive oil
1 teaspoon dried dill
Salt and Pepper to taste
Chickpeas–
1-15 ounce can chickpeas (drained, rinsed, patted dry)
1 Tablespoon Garam Masala (coriander, black pepper, cumin, cardamom, cinnamon)
1 teaspoon coconut sugar
1/2 teaspoon salt
1/2 teaspoon turmeric
1/4 teaspoon cayenne pepper
1 Tablespoon olive oil
Garlic Dill Dressing–
2 Tablespoons lemon juice
1 Tablespoon garlic, chopped
1/3 cup hummus, store-bought or homemade
1 teaspoon dried dill
1-2 Tablespoons water, to thin out
