What’s up, guys? Those of you who know me, know that I don’t eat meat. However, this is a delicious and healthy dinner recipe that I like to make for my son or guests that takes very little time to prepare. It’s great for those of you who are looking for a quick and easy dinner option that is healthy for you as well! Enjoy 🙂

Healthy Southwest Stuffed Peppers (4 servings):
4 bell peppers
1 lb ground turkey breast (or 93% lean ground turkey)
1/2 can low sodium garbanzo beans
1/4 cup onion
1 garlic clove
1 cup brown rice
3/4 cup tomato sauce
1 tsp ground chipotle powder
1 Tbsp chili powder
1 tsp Mrs. Dash
1 tsp garlic powder
1/2 cup reduced fat shredded cheese
