Carrot rice recipe
—————————–
½ cup regular or basmati rice or 2 cups cooked rice
1 cup to 1.5 cup water for pressure cooking
other ingredients:
½ cup grated carrots or 2 medium carrots
½ tsp Cumin seeds
2 green chili, chopped
½ tbsp Red Chili powder(Optional)
½ tbsp Samba Powder
2 tbsp Cow Ghee (Clarified Butter) Or oil
salt as required
1 small onion, thinly sliced

INSTRUCTIONS
preparing rice:
Soak ½ cup rice in a bowl in enough water for 30 minutes. drain and then keep aside, add the rice to the pressure cooker along with 1 to 1.5 cups water. Pressure cook for 2 whistles.
I used some leftover rice.
Grate 2 medium sized carrots ,slice 1 small onion and chop 2 green chili.

Tempering and Sauteing:
-In a pan heat 2 tbsp Cow Ghee (Clarified Butter) Or oil.
-Add Cumin Seeds
-Thinly sliced onions.
-Stir and saute the onions on a low to medium flame till onions start to turn light golden.
-Add the chopped green chilies.
-Stir and saute for half a minute.
-Add the grated carrots. stir very well.
saute the carrots for about 1 minutes on a low to medium flame the sauteing can take less or more time.
-Add the Cooked rice and stir.
-Season with salt, Red Chili powder and Sambar Powder again mix –very well
-serve carrot rice with a side Raita or Salad.
