Ingredients:
For the avocado mixture:
1 medium sized avocado
2 to 3 tbsp red onions, finely chopped
1.5 tsp lemon juice
1 to 2 green chilies, finely chopped (adjust to taste)
2 tbsp cilantro, finely chopped
1 tomato, finely chopped
salt to taste

For the egg mixture:
2 eggs
2 tbsp cilantro, finely chopped
1 tbsp onions, finely chopped
salt to taste

For the bread:
2 slices bread
2 tsp butter
1 to 2 tbsp cheese (I used Mexican cheese)

Directions:
For the avocado mixture:

Cut the avocado and scoop out the inside into a bowl.
Using a fork, mash the avocado pieces into a smooth creamy mixture.
Add onions, tomatoes, green chillies, cilantro, lemon juice & salt.
Mix well.
Keep aside.

For the egg mixture:
Whisk together egg, onions, cilantro & salt well.
Keep aside

Prep the bread:
Apply butter to one side of each bread

Making the sandwich
Heat griddle on low-medium flame.
Add oil
Pour the egg mixture and spread it
Place the bread, butter side up on the egg mixture
When the egg is done, flip using a spatula
Add spoonfuls of avocado on one of the bread
Add cheese
Using spatula gently fold in the side of the bread on top of the avocado/cheese mixture
Sprinkle with some cheese (optional)
Serve immediately
