Vegetarian Bread Omelette is a fiber and protein rich , gluten free choice for breakfast, kids lunch box or evening snack. Made with Besan or chickpeas flour, curd , vegetables and light spices . Its a Perfect way to serve Vegetables to your fussy eaters .
Ingredients-
4 bread slices
2 cups Besan or chickpeas flour
2 tbsp Curd
1 tsp – Ginger-Garlic paste
salt, Pepper to taste
2 tbsp grated carrot
1/4 cup finely chopped Green and Red Bell Peppers
1 onion finely chopped
1 tomato deseeded and finely chopped
chopped coriander leaves
Chopped green chillies (optional)
1/4 tsp baking powder
Oive oil for frying
1/2 cup Water
Cheese, Carrot and Onion for garnishing
How to make it-
1. Mix everything except oil and bread slices to make a smooth batter.
2.Heat a non stick pan on medium heat and grease it with Olive oil.
3. Spread the batter into the pan to make a big circle. Put a bread slice over the omelette and press gently so that the bread sticks to it.
4. Start covering all the bread sides with the omelette.
5. Press the omelette lightly all around with the spatula to make the omelet cook evenly.
5. Pour batter on the top of the bread so that it is well coated . Flip it over and cook well until golden brown on both sides.
6. Garnish it with grated carrot, onion and cheese .
