Poha ( flattened rice) is a very popular in many states if India. In Maharashtra it is popularly known as Kanda Poha. Flattened rice (poha) is cooked with spices making it a delicious and a healthy meal.
It is also a very good recipe if you are on your weight loss diet.

Ingredients :
– 3 Tbs oil
– 2 cup Poha ( thick poha)
– 1 onion finely chopped
– 2 – 3 green chillies finely chopped
– 7 – 8 curry leaves
– 1 Tsp mustard seeds
– 1 Tsp cumin seeds
– Salt as per taste
– 1 Tbs Sugar ( optional)
– ½ Turmeric Powder
– ¼ cup coriander finely chopped
– 2 Tbs grated coconut (optional, since it is a Maharashtrian dish we use it)
– 1 cup peanuts
– Juice of 1 lemon
Ingredients can be adjusted as per your taste.

Method :
Take 2 cup of thick poha and wash it under running water. Do not mix it with hands or else your poha will become soggy. Allow it to rest and self dry.
On a medium flame add 3 Tbs of oil and let it get heated. Add 1 cup of peanut and fry it till golden brown. Once the peanuts are fried, remove them and set is aside.
In the same pan now add 1 tsp of cumin seeds and mustard seed. Let it fry. Add 1 medium finely chopped onion. And cook till its golden brown.
Add 7 to 8 curry leaves and cook till 1 minute. Now add 3 to 4 green chillies and mix all well and let everything cook together.
Now time to add spices. Add ½ tsp turmeric and mix it. Add Salt as per your taste and add 1 Tbs of Sugar. Adding sugar will balance the taste.
Add poha to the cooked masala and mix it will. Add coriander and grated coconut and juice of 1 lemon. Mix all ingredients well. And look how bright our Poha has turned out.
You can garnish it with some aloo bhujia and its ready to serve.!
