Hi sweet friends!

In today’s video, I’m sharing three of our favorite meals! These recipes are family friendly, kid-approved and healthy! They’re quick to whip up, with one of them being a crock pot meal, and another a one pan meal! They’re perfect for the busy mom just trying to put a healthy, delicious meal on the table for her family at the end of the day.

MEAL #1:

Shredded Pork Tenderloin

1 package of pork tenderloin
2 tsp ground mustard
2 tbsp worcestershire sauce
1 tbsp parsley
2 tsp garlic powder
1/4 c red wine vinegar
1/3 c soy sauce low sodium
1/2 c olive oil

Cook for 6-8 hours on low in crockpot
Shred with forks
Then put in a rimmed baking sheet lined with aluminum foil and a thin layer of shredded pork, top with juices from crockpot (if you skip this, the oven will dry out the meat, so make sure you coat with juices) and then broil for 8-10 mins tossing it around every 3-5 mins.
Serve with rice and veggies or on tortillas

Roasted Zucchini

Wash and cut zucchini
Cut into rounds
Coat with olive oil
Sprinkle with Everything but the Bagel seasoning, or seasoning of choice

Roast in oven at 425 degrees for 20-25 minutes
Broil for 3-5 minutes at the end to add a little crisp

MEAL #2:

One Pan Chicken Fajitas:

One package of boneless skinless chicken breasts (I prefer thinly sliced)
One onion
3 bell peppers
Olive oil
Fajita seasoning

Slice peppers, onion and chicken
Drizzle with olive oil and sprinkle on fajita seasoning
Place in oven on a greased baking sheet (or use aluminum oil or parchment paper)

Bake at 375 degrees for 20-25 minutes

Serve with your fruit of choice

MEAL #3:

Roasted Cinnamon Sweet Potatoes + Apples with Apple Chicken Sausage

3lb bag of sweet potatoes
3lb bag of apples (I used Gala)
2 TBSP refined coconut oil (olive oil works too)
2 packages of apple flavored Chicken Sausage (fully cooked)
1 TBSP brown sugar
2 TSP ground cinnamon

Wash, peel and dice sweet potatoes and apples (1/2 inch pieces)
Coat with melted oil
Mix in cinnamon and brown sugar

Bake in oven at 400 degrees for 35 minutes (or until tender)

While the potatoes and apples are baking, dice your chicken sausage.
Place the sausage in a skillet with a drizzle of olive oil and cook for about 10 minutes.

Serve warm and enjoy!
