Being stuck indoors for quite some time, I’ve been trying to bake healthier versions of my favourite treats. This strawberry sheet cake is sooo easy to make, unbelievably fluffy, needs minimal ingredients and has 60 calories per serving!
Recipe (make 16 slices)
INGREDIENTS
6 eggs
40g sugar
20g honey
80g flour
2 tsp lemon juice
1 tsp vanilla extract
½ tsp salt
200g strawberries or other fruit of choice
Optional: 1 tsp lemon zest and ½ lemon extract
METHOD
Separate the egg yolks and whites. In a large bowl, mix the egg yolks with the sugar and beat until they become pale yellow and fluffy. Mix in the honey and incorporate.
Add in the flour one tbsp at a time and beat into the yolks.
In a separate bowl, beat the egg whites with salt until soft peaks. Add the lemon and whip until you achieve stiff peaks. Mix in vanilla extract. If needed, add a tsp of sugar to make stiffer.
Using a spatula, slowly incorporate the egg whites into the yolk and flour mixture. Don’t over-mix, so it stays super fluffy.
Line a baking tin with baking paper and pour in your cake mix. Top with chopped strawberries or any fruit of choice.
Bake in pre-heated oven at 180 Celsius for 30 minutes or until golden brown.
Let cool, slice into lovely rectangles and sprinkle with icing sugar.
