This beetroot salad is a salad from Russian cuisine, is made with root-vegetables, dressed with olive oil. It’s healthy, perfect year-round, but especially during the Holidays.
INGREDIENTS:
2 medium beetroots
3 medium potatoes
3 medium carrots
2 pickled cucumbers
1/2 cup of baby peas
Olive oil
Salt and pepper
Steam all the vegetables and let them cool to room temperature. I used my Instant Pot to steam all the vegetables.
Peel vegetables and cut them into cubes. Season with olive oil, salt, and paper. Enjoy!
