Oatmeal Cookie Recipe:
2 1/2 Cup (200g) old fashioned oats
1/2 Cup (60g) white whole wheat flour
1/4 Cup (30g) chocolate whey protein powder
Heaping 1/4 cup (50-60g) sugar substitute
1 1/2 Tbsps unsweetened cocoa powder
1 Tsp baking powder
Pinch of salt
1/2 Cup unsweetened vanilla almond milk
1 Egg
1/4 Sugar-free / calorie-free maple syrup
2 Tsp vanilla extract
6 Tbsps (36g) Peanut flour – made into peanut butter
*For my peanut butter I used 6 Tbsp peanut flour and just made “peanut butter” out of that!
*NOTE: If you use peanut flour instead of actual regular peanut butter your cookies won’t be as chewy … but you’ll save a lot of fat macros.
Optional – Add semi-sweetened mini chocolate chips to the batter for extra chocolate flavor!
