Quinoa is gluten free high protein and one of the few plant foods that contains sufficient amount of all nine essential amino acids. It is also high in fiber, magnesium, B vitamins, iron, potassium, calcium, phosphorus, vitamin E and various beneficial antioxidants.
A cup of quinoa will also provide twice the protein and about five grams more fiber than the same amount of white rice. Due to this higher quantity of protein and fiber, quinoa is not only the healthier choice but will also fill you up faster allowing for smaller portion sizes.

1 cup quinoa
2 cups water
1 large tomato chopped
1 medium pepper chopped
chopped green onions
6 pcs. chopped pickled green olives
1 tbsp balsamic vinegar
2 tbsp olive oil
