This potato salad is the PERFECT recipe to make using your Instant Pot! I LOVE potato salad, so I thought I would share my Mom’s recipe with you! The best part is… you can cook the eggs and potatoes at the same time!

Then to cook it: Put in your potatoes on the bottom, add a trivet, and place the eggs on top of the trivet.
Push the Manual or Pressure Cook Button for 5 minutes. Once the timer is done and beeps, let it rest in there for 5 minutes. Then turn the knob to venting to let out the air. Put your eggs in an icebath for 5 minutes and put your potatoes in the fridge until ready to use.
