#1 Garlic Parmesan Cauliflower Rice
5 C Cauliflower Rice – grate 1 large head or frozen works well
3 Tbsp Butter
3 – 4 Garlic Cloves- minced
1/3 C Parmesan Cheese – grated
Salt & Pepper to taste
Parsley – chopped for garnish
#2 Outstanding Yellow Rice
Ingredients:
3 cloves
2 cardamoms, bruised
1″ stick of cinnamon or cassia bark
1 bay leaf
1 medium sized onion finely sliced
2 cups basmati rice
4 cups vegetable or chicken stock or plain water, freshly boiled
2 bouillon cubes (if stock is not used)
2 tablespoons lime juice or 1 medium big tomato sliced
1/2 teaspoon turmeric powder
ghee or oil
salt to taste
GHEE
Clarified butter aka butter that has been simmered and strained to remove all water.
CARDAMOM
A spice made from the seed pods of various plants in the ginger family. A great substitute would be a pinch of cinnamon or nutmeg. It has a complex flavor. It’s citrusy, minty, spicy, and herbal all at the same time, and it’s highly fragrant, too.
BASMATI RICE
A variety of long grained rice that originates in the foothills of the Himalayas and is traditionally served in Indian and other South Asian cuisines.
CORIANDER
An annual herb in the family Apiaceas. It is also known as Chinese parsley, and in the United States the stems and leaves are usually called cilantro.
#3 Veggie Fried Rice Recipe
White Rice – 1 Cup
Water – as required
½ tsp Salt
2 – 3 tbsp oil
Whole spices:
(Bay Leaf, Star Anise, Black & Green Cardamom, Black Peppercorns, Cloves, Javitri, Cinnamon Stick)
Chopped Garlic 5 – 6 cloves
1 inch Ginger
2 – 3 Chopped Green Chillies
Chopped Medium size Onion
¼ cup Chopped Carrots
2 tbsp Chopped Yellow pepper
2 tbsp Chopped Green pepper
2 tbsp Chopped Red pepper
2 – 3 tbsp Chopped Fresh Sweet Corns
½ cup Chopped Cabbage
1 tbsp Soy Sauce
1 tsp Vinegar
1 tbsp Red Chilli Sauce
½ tsp Black Pepper Powder
Chopped Coriander/Cilantro
BASMATI RICE

JAVITRI
A crimson red colored thread like material that envelops the nutmeg. It is spicy in taste.
STAR ANISE
A very strong, distinct flavor that is sweet and spicy, similar to licorice, and should be used in small quantities.
