The first two recipes are crockpot meals, and the last is a breakfast casserole! We love breakfast for dinner! See below for the recipes. CHICKEN SALAD RECIPE:

2lbs chicken breasts
1 onion, diced
1/2 tsp salt
1/2 tsp pepper
3/4 cup mayonnaise
1 TBSP brown sugar
Desired add-ins (grapes, nuts, celery, cranberries, apples, pears, etc)

Place chicken, onion, salt and pepper into crockpot. Cook on high for 4 hours. Shred or cube chicken. Allow to cool for about 30 minutes. Stir in mayo, sugar and add-ins. Serve over lettuce, on toast, in a wrap, or on its own.

SWEET CHILI PINEAPPLE CHICKEN RECIPE:

2lbs chicken breasts (or tenderloins)
1 cup of sweet chili sauce
1 tsp minced garlic
1 large can of pineapple chunks (or 1 fresh pineapple)
Rice (we love Basmati, but you can use any rice)

Place chicken, minced garlic and sweet chili sauce into crockpot. Cook on high for 4 hours. Add pineapple in after 2 hours and continue cooking until chicken shreds. Serve warm over a bed of rice with a drizzle of sweet chili sauce.

BREAKFAST CASSEROLE (DAIRY FREE):

12 eggs
1lb of desired ground meat (ground turkey, turkey sausage, pork sausage, etc)
1 large sweet potato, sliced into THIN rounds
1 onion, diced
1 tsp garlic powder
1 tsp chili powder
1 cup of spinach, chopped
Desired add-ins (broccoli, bacon, asparagus, bell peppers, etc)

Brown your meat. In a bowl, mix eggs, meat, add-ins, onion, spinach and seasonings. Spray a 9″ x 9″ glass dish with oil or butter. Line the bottom of your baking dish with the sweet potato rounds. Pour in the remaining ingredients. Bake in the oven at 375 degrees COVERED for 40-45 minutes.
