WHAT’S FOR DINNER? | PANTRY MEALS | DINNER IDEAS | COOK WITH ME | LIVING IN THE MOM LANE

This week I’m sharing meals from my pantry. I didn’t have to purchase anything to make these meals. The ingredients were either from the pantry, fridge or deep freezer. This is one way to not waste food and to stretch your grocery budget a little further each month.

BUTTERMILK BISCUITS RECIPE LINK:

BUTTERMILK BISCUITS:
2 1/3C OF SELF RISING FLOUR
6 TSP SUGAR
1/2 C OR 1 STICK OF BUTTER ( PLACE BUTTER IN FREEZER FOR 1 HOUR THEN GRATE ON A BOX GRATER)
1 1/3 C BUTTERMILK
1 C ALL PURPOSE FLOUR IN A MEDIUM BOWL FOR ROLLING BISCUITS IN

PREHEAT OVEN TO 425 DEG. BAKE ON CENTER RACK
GREASE 10 1/2″ IRON SKILLET WITH BUTTER OR A BAKING PAN
IN A LARGE BOWL MIX FLOUR, SUGAR AND GRATED BUTTER TOGETHER USING HANDS
SLOWLY STIR IN BUTTERMILK AND MIX
USE A LARGE ICE CREAM SCOOP TO MEASURE BISCUITS. ROLL IN ALL PURPOSE FLOUR AND SHAKE BACK AND FORTH IN FINGERS TO GET OFF EXCESS FLOUR. PLACE IN IRON SKILLET SO THAT EACH BISCUIT IS TOUCHING.
BAKE 25 MINUTES UNTIL BROWN. TAKE OUT OF OVEN AND BRUSH WITH MELTED BUTTER AND RETURN TO OVEN TO BROWN SLIGHTLY MORE, ABOUT 5 MINUTES.

CAN BE FROZEN: TO HEAT PUT ON FLAT PAN COVER WITH FOIL BAKE IN A 400 DEG OVEN ON MIDDLE RACK JUST UNTIL SOFT. REMOVE FOIL RETURN TO OVEN FOR ANOTHER 5-10 MINUTES.
