Hi friends! In this episode of Bianca’s Kitchen, I’m sharing my recipe for vegan tuna salad. I’m not a fan of the simple, bland mashed chickpea version so I’ve been experimenting with other and more ingredients for a far more realistic taste. Textured vegetable protein (TVP) and nori seaweed are the key ingredients of my recipe. My vegan tuna salad requires more time and ingredients than mashed chickpeas, but the result is so worth it!

Ingredients:
● 3.5 oz. /100g chunky textured vegetable protein (NOT the very small the minced meat imitation like for example Bob’s Red Mill! It has to look like this product:
● 1 sheet nori (2tbsp flakes)
● 2 small dill pickles
● 4 tbsp vegan mayo
● 4 tbsp vegan ketchup
● 3 tbsp dill pickle water
● 3 tbsp vegan vinegar
● 1 tbsp lemon juice
● 1 tsp fish seasoning

Method:
Fill tvp into a bowl, add boiling water. Let the tvp soak for at least 10 minutes, stirring it occasionally. It’s ready when it has a rubbery, wobbly consistency. Strain it. Then take handsful, wringing out as much water as possible. Divide the TVP into three parts. Fill the first part into your high speed blender, pulse for a second and check the consistency. Repeat until you reach the consistency that resembles tuna the most. Do this with all three parts of the TVP.

When you’re done, mix the ketchup, the mayo, the nori, the fish seasoning, the pickle water and the vinegar in a bowl. When you have a smooth sauce, chop the pickles very finely. Add the pickles and your TVP into the bowl, mix thoroughly. Ideally, you let the tuna salad marinade in the fridge for a few hours for a stronger taste. But you also can enjoy it right away. Leftovers can be kept in the fridge for up to three days.
