Hey – I have finally been able to create a mini-series, showing you 5 different meal ideas for breakfast, lunch, dinner and dessert. I have sourced inspiration for these recipes from either online or from a Slimming World recipe book (both linked below).

I hope you enjoy these lunch ideas – each recipe has been rated depending on how easy I thought they were to make and also how tasty I thought they were. This is based on my experience and personal taste. My personal favourite is the pizza omelette as these are super versatile depending on your pizza preference for toppings! AND – even thought its an omelette you totally believe its pizza!

Cheesy Colcannon Potato Skins

4x large baking potatoes
2x medium onions
150g spring greens
150g plain quark
80g reduced fat cheese
3 small tomatoes

Great for adding with a salad adding that filling extra. Nice way to hide those greens too if you are cooking for fussy eaters – cut the greens nice and small.
Cajun Fish & Pineapple Salsa

Ingredients:
1tbsp Cajun Seasoning
1 tsp dried parsley
1 tsp dried oregano
3 firm white fish (for 3 people)
2 tbsp lime juice
1 romaine lettuce heart, shredded
For the salsa:
75g fresh pineapple
75g baby sweetcorn
75g cucumber
1 small red onion
1 medium-hot chilli
100g radishes

This was light and refreshing – would be great for adding to a BBQ. The only thing I would suggest is to cut all of the salsa ingredients smaller and more bite-size. The flavours were great though!
Tomato Soup with Turkey Meatballs

Ingredients:
500g lean turkey mince
1/2 pack of basil
1 tsp dried oregano
4 level tbsp parmesan cheese
1x large onion
2x garlic cloves
2x 400g chopped toms
2x tbsp tomato puree
750ml chicken stock
100g dried spaghetti

This was a great “soul” feeding lunch… if you get what I mean? The turkey meatballs were a great addition along with the linguini and was very satiating. For such a simple tomato soup base – it is very flavoursome.
Pizza Omelette

1x Chicken Breast
2x tbsp. Tomato Puree
2x tbsp. Sweet Corn
120g Reduced Fat Cheddar

Classic staple in our family. I am not sure if this is just psychological – the fact that it looks like a real pizza, it actually tastes like one too! If you love garlic like I do, mince a load of cloves and mix it with the tomato puree base. Great thing about this meal idea is that it is very versatile to your preferences – do not be afraid to experiment with this one!
Salmon & Beetroot Potato Salad

Ingredients (one person):
1x boneless salmon fillet
180g potatoes
1 tbsp fat free quark
65g beetroot
0.5 level tsp horseradish sauce

This is a super simple meal idea and yet very flavoursome! The beetroot potato salad is straightforward to make and the addition of the horseradish sauce adds a kick to the dish. Again, a great addition to a BBQ spread.
