Handvo is a traditional Gujarati recipe. We are using rava or sooji in this recipe to make it quick and instant one. It tastes just awesome and healthy recipe too. This can be a quick evening or tea time snack. You can give this in lunch box for your little ones. You can try this recipe at home and drop a comment for me. Ingredients:
• 1/2 cup fine Sooji
• 1/2 cup Curd
• 2 tsp Besan
• Salt to taste
• 1/4 cup Water
• 1/4 tsp Turmeric powder
• 1/2 tsp Coriander powder
• 1/2 tsp Red chili powder
• 2 tsp Finely chopped Capsicum
• 2 tsp finely chopped Tomato
• 2~3 tsp Mint leaves
• Finley chopped Green chili
• 1/2 tsp Eno fruit salt
• Water
• 1 tsp Oil
• 1/2 tsp Mustard seeds
• 1/2 tsp Cumin seeds
• Curry leaves
• White sesame seeds
• Finely chopped Coriander leaves

Method:
• Take sooji in a bowl.
• Add curd, besan, salt and mix everything well together.
• You can use buttermilk or lemon juice in place of curd.
• Add water and mix well.
• Add turmeric powder, coriander powder, red chili powder, capsicum, tomato, mint leaves, green
chili and mix well.
• You can use veggies of your choice.
• You can use coriander leaves in place of mint leaves.
• Cover and rest the batter for about 15-20 minutes.
• Mix the batter well once more.
• Add eno, water and mix well.
• You can add 1/4 tsp baking soda in place of Eno.
• Heat up oil in a pan.
• Add mustard seeds and let them pop up.
• Add cumin seeds, curry leaves, white sesame seeds and mix well once.
• Add the batter at the center of the tadka and spread it evenly.
• Cover and cook on low heat for about 8-10 minutes until lower side is cooked well.
• Remove the lid and flip over the hadvdo into a dish.
• In the same pan add a little oil and slide the handvo into the pan.
• You can add tadka again if you want.
• Cook for another 3-4 minutes until other side is cooked well.
• When handvo is cooked well from both sides take it out into a dish.
• Garnish with coriander leaves and cut it into pieces.
• Rava handvo is all ready.
